Synthesis and evaluation of anti-microbial and anti-inflammatory activity of fatty acid esters

Abstract

A series of sugar fatty acid esters derivatives were synthesized and evaluated for their in vitro antimicrobial activity against Gram positive bacteria (Staphylococcus aureus), Gram negative bacteria (Escherichia coli) and antifungal activity (Candida albicans).The results revealed that the compounds Lactose monooleate (LMO) & Lactose octamyristate (LOM) with MIC value 0.0103 and 0.0125, showed the highest anti-bacterial activity against gram positive bacteria (S.aureus). Lactose mono linoleate (LML) & Maltose octaoleate (MOO) with MIC values0.0103and 0.0101 showed the highest anti-bacterial activity against gram negative bacteria (E.coli). Lactose monooleate (LMO) & Lactose octaoleate (LOO) with MIC values 0.0103 and 0.0101 showed the highest anti-fungal activity against C. albicans. Cefexime and fluconazole were used as a standard.
